I Always had a passion for Cooking. My Nonna started teaching me how to cook when I was just 8. She taught me how to cook an egg 3 ways and I was hooked. After that I’d badger her to cook more complex dishes, watching and learning with her every move in the kitchen.
Fast forward a bunch of years, and I decided to go to Culinary School for my final years of High School. There I was able to learn, practice and hone some essential skills that would allow me to grow Culinarily.
Like many teenagers, I did not know what I wanted to do forever… I allowed cooking to take a back seat and at 18 I joined the Bay Shore Fire Department where I was able to learn a whole new set of skills and protect our community. I was also a deckhand on the Fire Island Ferries where at 19 I obtained my master’s license and became a Ferry Captain. Then at 25 I found myself headed into Corporate America. I got Married and had kids. I always continued to cook elaborate meals for friends and family.
In 2018 Impractical Smokers was born. A test really, to see if we could enter the market and to learn if there was a demand for "NY style" BBQ. Well, it took off. We were running the catering business almost every weekend in the warmer months… making people smile and filling bellies. Then Monday, it was back in a suit and tie; commuting and working in the boroughs. In 2020, the company I was with laid off its most of its North American Salesforce. With all of the unknown at that time, I was unsure if face to face meetings would ever be “a thing” . We leaned into the catering business Sun. through Sat. It gave us the confidence to invest into a Food Truck and take the plunge into Entrepreneurship.
